Blueberry Banana Muffins

Ingredients

  • 3 ripe bananas

  • 1/3 cup oil (grapeseed, olive, or canola all work fine)

  • 1 teaspoon baking soda

  • 1 1/2cups of gluten free flour (I use Bob’s Redmill 1:1 flour, because it already includes xanthan gum)

  • 1 teaspoon of salt

  • 1/2 cup of maple syrup

  • 1/2 teaspoon of cinnamon

  • 2 eggs

  • 1 cup of frozen or fresh blueberries

Recipe

Step 1. Preheat the oven to 350°F.

Step 2. Place cup liners along a baking sheet.

Step 3. Mash the bananas in a bowl. Once complete, add in the rest of the ingredients and mix together.

Step 4. Scoop the batter into muffin tins.

Step 5. Bake for 20-25 minutes at 350°F.

Step 6. Allow muffins to cool and eat up!
